Honey Chicken Drumstick
Yield: 4
Serving Size: 2 drumsticks
Ingredients
2 Garlic cloves, minced fine
¼ tsp salt
1 tsp ground cumin
1 tsp paprika
2 lb skinless chicken legs
(about 8 drumsticks)
3 Tbsp honey
2 tsp cider vinegar
Steps
- Preheat broiler. Lightly coat a broiler pan with nonstick cooking spray.
- In a large bowl, combine garlic, salt, cumin and paprika. Add chicken to bowl and toss to coat.
- Place chicken on prepared broiler pan. Broil chicken 7 minutes on each side.
- In small bowl, combine honey and vinegar and stir well.
- Remove chicken from oven and brush with half of the honey mixture.
- Broil for 1 minute more.
- Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 minute or until chicken is cooked through.

Rotini Pasta Salad

Serving Size: About 1 ½ cups
Ingredients
12 oz. multigrain tri-colored rotini pasta
1 ½ cups cherry tomatoes, halved
1 small red bell pepper, chopped
1 medium cucumber, chopped
1 cup broccoli florets
1 cup black olives, pitted and sliced
1 cup low fat Italian salad dressing
½ cup cubed low fat mozzarella cheese
Steps
- In a large pot, cook pasta according to package directions. Drain and rinse in cold water.
- In a large bowl, combine cooked pasta with tomatoes, bell pepper, onion, cucumber, broccoli, olives and dressing.
- Add cheese and toss gently.
- Cover with plastic wrap and chill for at least 2 hours. Toss before serving.

Strawberries & Cream

Serving Size: ¾ cup
Ingredients
1 lb fresh strawberries, hulled and sliced
2 Tbsp sugar, honey or Stevia
2 Tbsp Grand Marnier, or other orange liqueur
1 tsp lemon juice
¼ cup nonfat vanilla Greek yogurt
4 tsp sliced almonds
In a large bowl, combine strawberries, sugar, Grand Marnier and lemon juice. Let stand for about 30 minutes, or until strawberries release their juice. Divide the strawberries among 4 dessert bowls or glasses. Top each with 1 tablespoon of the Greek yogurt and 1 teaspoon of the almonds.
