Energizing Pumpkin Muffins

2 eggs
1 teaspoon vanilla
1 cup pumpkin puree
1 cup pitted dates – hot water for soaking dates if needed
1 ripe banana
2 cups rolled oats
1 teaspoon baking soda
½ teaspoon sea salt
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
¼ teaspoon nutmeg
If your dates are hard, or your blender is old, soak dates in hot water for 5 minutes and drain. Preheat oven to 350 degrees. Put all ingredients in blender and blend until smooth. Pour into 12 silicone muffin cups (Or grease regular muffin tins) and bake for about 18 minutes. Enjoy with butter or cream cheese. These muffins freeze well for later. Enjoy!
