Ingredients

4 tbsp olive oil

3 cloves of garlic, minced

1 c. zuccini sliced

1 c. yellow squash sliced

1 c. red onion sliced

1 c. cherry tomatoes halved

1 c. brussel sprouts halved

1 c. muchrooms of your choice (opt.)

3 tbsp organic balsamic vinegar or lemon juice

1/2 c. fresh basil

1/2 c. fresh parsley

1/2 c. olives of your choice

3 c. lentil pasta or pasta of your choice cooked

Salt & pepper to taste

Instructions

1. In a large pot boil water and cook pasta as directed

2. In a large pan saute vegetables in olive oil

3. Toss with pasta and season with salt and pepper

4. Add fresh herbs and drizzle with balsamic or lemon juice
