Ingredients:

1 pound stir fry beef

2 Tablespoons avocado oil

1 teaspoon arrowroot

Salt and black pepper

4 cups mixed vegetables (broccoli florets, strips of yellow onions, thinly sliced carrots, thinly sliced red peppers, sliced mushrooms, snow peas or any you have on hand)

Sauce:

3 garlic cloves, minced

1 teaspoon grated ginger

1/3 cup water

1/3 cup orange juice

¼ cup soy sauce

1 1/3 teaspoon toasted sesame oil

Season the beef with salt and pepper. In a medium bowl, toss the beef with the arrowroot until coated and set aside. Prepare vegetables. Place one Tablespoon of avocado oil in large skillet or wok. Cook the beef over medium-high heat until browned, about 2-3 minutes. (the meat does not have to be fully cooked at this time) Once browned, remove meat from pan and set aside. Add vegetables to pan and cook until tender, but still crisp, about 4-5 minutes. Remove from skillet and set aside with the meat. While vegetables as cooking, combine the sauce ingredients in a bowl and mix well. Turn your heat to medium-high and add the sauce to the pan and bring to a simmer. (You may add more arrowroot to thicken or water to reach desired consistency) Allow to simmer 2-3 minutes, add beef and vegetables to the skillet until heated thoroughly. Serve over brown rice or brown ramen noodles. Enjoy!
